stainless carb gasket

I live in S FL, so a choke and carb heat are never needed.  I routinely block off manifold crossover passages when I do a rebuild.  Should I consider using the stainless steel plate under the carb and if so do you recommend standard gaskets on both sides?

With blocked heat crossover passages any gasket will work under the carburetor.  No stainless or any other plates would be needed.

The manifold will still "heat soak" anyhow, so it's best with this fuel to use a thick gasket as an insulator.  We sell a really nice 1/4" thick gasket (4 hole), and a .230" gasket (open)......Cliff
